Super Green Kale and Avocado Salad

Last week I attended SXSW and I wrote about 7 detox tips to help you get back on track . One tip suggested that you incorporate raw veggies into your regimen. Unfamiliar with raw food recipes, I searched around until I found one that was easy, almost too easy to taste good. Well, let me say, it was phenomenal and I made enough to eat the next day for every side dish, lol. I got this recipe from emilieeats.com but I decided to add some heat to it!

You’ll need a spiralizer for this. If you don’t have one, you can just julienne or cut into bite sizes. This makes about 4-5 servings.

Ingredients:

  • 2 bunch kale, chopped
  • 1 large ripe avocado
  • 2 lemons, juiced
  • 1 zucchini, spiralized or chopped
  • 1 cup shelled edamame
  • ½ cup cilantro, finely chopped
  • 3 tablespoons hemp seeds
  • Red Chili Flakes- to your liking
  • 1-2 teaspoons garlic, minced
  • Salt and pepper, to taste

Directions:

 

  1. In a large bowl, add kale, avocado, and lemon juice. Massage with your hands for 3-5 minutes, until ingredients are combined and kale has softened.
  2. Add spiraled zucchini, edamame, cilantro, hemp seeds, and garlic to the bowl. Toss until fully mixed.
  3. Season with salt, pepper and red chili flakes to taste. Enjoy !
